Cooking tips: French fries – Branova

Just follow this simple rule and you will make children’s favorite crispy French fries.

Crispy French fries are an indispensable snack on the menu of fast food restaurants. Making delicious French fries is no longer a secret. So, having a suitable fryer and french fry workstation is a prerequisite; The rest are simple actions.

Deep cylinder blast furnace

Although experienced chefs can use almost any fryer to cook delicious French fries, it is easier to control the fryer with a computer and standardize the cooking process through pre-set parameters. It can be an electric fryer or a gas fryer. Any one is fine.

The recovery time of the fryer is very short. Based on experience, you would like the fryer to return to the set temperature of 175 ℃ within 2 minutes after adding cold French fries. That is to say, the power of the fryer must be proportional to its capacity. Simply put, this means that if there is a lot of oil in your cylinder, you need a high-power fryer to achieve good reheating. A blast furnace with a 22 liter oil cylinder requires a power of 14 kW or more to achieve ideal reheating.

The cooking temperature is approximately 165 to 175 ℃ (330 to 350 ℉). If the oil temperature is too low, French fries absorb more oil; If the oil temperature is too high, the French fries will be burnt.

French fries are often prone to sticking together and becoming soft and fluffy. Therefore, during the frying process, approximately 45-60 seconds after the frying begins, remove the frying basket and shake it a few times: this can prevent the French fries from sticking together. You can easily program the fryer and remind operators to do so.

Don’t fill the fry basket too full (about half is enough).

After the cooking time is over, it is necessary to immediately lift the frying basket, otherwise the remaining temperature in the tank will continue to fry, which will affect the taste of the French fries.

Cooking

Computer controlled fryer can accurately control the frying time. Some of these electric fryers have temperature compensation programs; This means that if you have a large frying load and the temperature drops too low, the electric fryer will take longer than the cooking time you set.

If you are not using a computer to control the fryer, try using a timer to monitor cooking time.

French fries insulation

The storage temperature of French fries is between 40-50 ℃. There are many french fry workstations on the market, but some of them only display without insulation function. If the idea of using a thermometer to check temperature seems too boring, you can reach into the food trough without touching it. You should feel a very hot sensation, but it’s not enough to burn your skin.

Save time

Keep the French fries for no more than 10 minutes. Some international fast food chains even have a limit of 6 minutes. Once the recommended insulation time is exceeded, French fries will become soft.

flavoring

Pour the French fries into the French fries workstation, add appropriate seasoning and stir. Let excess oil drip from the small hole on the french fry workstation.

Oil filter truck

Fresh oil is essential for producing good crispy French fries. However, seasoning and moisture in food can damage oil and shorten its lifespan. Regularly filter the oil as your operating procedure. If your fryer comes with a built-in filtering system, it would be even better. If not, consider a fryer with oil filter reminder function.
